Preliminary Competition

The Preliminary Competition is the second step towards consideration for a C-CAP Scholarship. Students must be selected to participate in each of the following steps:

  • C-CAP Application
  • C-CAP Preliminary Competition
  • C-CAP Final Competition

Acceptance into the Preliminary Competition

Only applicants selected by C-CAP are eligible to compete in the Preliminary Competition. Applicants are chosen based on the following criteria:

  • Completion of and responses on the C-CAP Cooking Competition for Scholarships Application
  • Applicant’s participation in C-CAP activities
  • Applicant’s work experience

Note: Given the selection process, some schools may have more competitors than others.

Recipes

Students will be asked to prepare two (2) of each dish in one (1) hour:
• French Rolled Omelet
• Tomato, Cucumber and Bell Pepper Salad
• Knife cuts

Competitors must memorize the recipes; notes will not be allowed. Please contact your culinary teacher or local C-CAP Coordinator for the recipes.

Judging

A panel of industry professionals and culinary school chef instructors observe competitors throughout the competition. The panel judges competitors and their dishes based on the following criteria:

  • Knife skills and cooking techniques
  • Taste, appearance, and preparation of recipes
  • Knowledge and execution of safe and sanitary kitchen procedures
  • Maintenance of a clean and orderly station throughout the competition
  • Organization and speed
  • Poise and confidence in the kitchen, ability to handle (routine) pressure and maintain a positive attitude

Careers through Culinary Arts Program (C-CAP) works with public schools across the nation to prepare high school students for college and career opportunities in the restaurant and hospitality industry. A national nonprofit, C-CAP provides teacher training, scholarships, cooking competitions, job shadows, training and internships, college and career advising, and product and equipment donations.
