Combine all ingredients.  Then season with a dynamic C-CAP graduate speaker, Chopped Champion, Lester Walker, add the dedicated C-CAP staff, the fantastic crew at Red Rooster, great weather, and voila, you will be serving up the most successful C-CAP Junior Benefit to date!

If you weren’t there for the 4th Annual C-CAP Junior Benefit, A Taste of Fall, on Monday, November 12, at Ginny’s at Red Rooster, you missed out!  Everyone raved about the venue, the crowd, the one-of-a kind auctions items, the delicious drinks mixed by C-CAP graduate and Featured Mixologist, Yvan Lemoine, and most importantly, the delectable bites prepared by C-CAP graduates for this exciting walk-around-tasting extraordinaire.  Raising over $30,000 was only one of the many accomplishments of the evening.  The event also provided a learning experience for recent graduates who assisted their fellow, more experienced alumni, to prep and serve the impressive dishes.

On the savory side, we had Kelvin Fernandez, Executive Chef at Strand American Bistro, who prepared a velvety, mouth-watering Butternut Squash Soup.  Executive Chef, Sean Quinn, of Chadwick’s Restaurant, served a delicious and creative BBQ Pulled Pork “Cone-Ucopia” with Slaw.  Next up was Sous Chef, Cesar Gutierez, of Lexington Brass, who created a beautiful, palate-pleasing Miso Butternut Squash Puree with a Pumpkin Chip.  Brandon Bryan, of Benoit, made a wonderful, traditional Cod Bradade and Lester Walker, a recent Chopped Champion and owner of Ghetto Gastro, served up the “GG Soul Roll,” reminiscent of a wasabi-infused Thanksgiving meal packaged as a sushi roll.  Our gracious host, Red Rooster also provided a delicious and popular dish called “Lamb Bunny Chow,” which featured an African lamb stew in a hollowed-out, mini-bread bowl.

On the sweet side, we had Pastry Cook, Santo Saitta, from Bar Boulud, who made an expertly crafted, refined and delicious Pomme Caramel Confit.  Stephanie Grajales, of The Ritz-Carlton Central Park’s new restaurant, Auden, whipped up a heavenly Pumpkin Cheesecake with a Pecan Crust and innovative Red Velvet Cake Pops.  Last, but certainly not least, we had the exciting creations of Mehdi Chellaoui, from Chellaoui Chocolatier/Dörk Chocolate, which included Dark Chocolate Passion Fruit Truffles, Dark Chocolate Port Truffles, and a Rich Dark Hot Chocolate that were all blissfully decadent.  Joshua Needleman, of Chocolate Springs, generously donated the chocolate used.

The evening was enhanced with the wonderful music provided by the David Grausman Trio (David Grausman—Keyboard, Cliff Schmitt—Bass, and Phil Stewart—Drums) and the fantastic and attentive staff at Red Rooster, headed up by Erica Morris, Director of Special Events.  As an added surprise bonus, Celebrity Chef Marcus Samuelsson, Chef/Owner of Red Rooster. and a C-CAP Board member, dropped in to say how proud he was of the C-CAP graduates and how happy he was to donate the space to host this exciting event.  Graduates and attendees alike were thrilled to chat with Marcus and get a photo-op with the celebrity chef.  Other illustrious surprise guests were restaurant-royalty couple, Nina and Tim Zagat (also a C-CAP Board member).

The delicious beverages that accompanied the outstanding food were all generously donated by our alcohol sponsors: vodkas by Chopin Vodkawines and prosecco by Charmer Sunbelt Group and craft beer by Stone Brewing Company.  As an exciting take-away gift, each of the 150+ attendees received the popular Zagat Survey NYC Night Life Guide, generously donated by Zagat Survey.  Each of our chefs also received specialized gift bags, donated by Zabar’s and Harold Import Company.

The luxurious, one-of-a-kind silent auction items included a Berkshires getaway, third row Yankees tickets, Metropolitan Opera tickets, complete with a backstage tour with lead cast member and C-CAP Junior Committee member, Kate Lindsey, house seats and a backstage tour to Broadway’s Nice Work If You Can Get It, three luxe Michael Kors, two sumptuous Coach Handbags, a chef’s tasting menu for four at Strand Bistro, and numerous cooking, baking and wine tasting classes (just to name a few of the 24 exciting items).

Needless to say, the guests at this sold-out C-CAP Junior Benefit went home sated from the sumptuous spread and excited to get more involved with the organization.  C-CAP would like to raise a glass to everyone who made this event possible.  Happy eating, and we look forward to next year’s A Taste of Fall!!
