Ikimi Dubose: Making It On The Hill

How C-CAP Made a Difference
Dubose received cash scholarships, which she used to attend Johnson & Wales
University. In 2006, she was honored at the annual benefit—“my most memorable C-CAP experience,” she explains. “C-CAP invited my high school instructors and my first chef. To top it off, Thomas Keller and I chatted for quite some time about being successful.

Ikimi Dubose runs the second largest of five dining areas in the U.S. Capitol. On a typical day, her Rayburn Café serves over 14,000 meals to members of Congress and staffers. She fields menu requests from lawmakers, including Speaker of the House Nancy Pelosi.

It’s a far cry from the world that brought her into the C-CAP program in high school. Dubose was on her own long before graduation, choosing independence over a troubled family life. Yet, in her culinary arts class, she revealed great things to come. Among her first achievements: becoming the youngest-ever manager for Marriott International. “That showcased my ability to learn quickly and implement effective programs in the kitchen,” she confirms.

A TASTE OF C-CAP: Ikimi’s Pico de Gallo
A Congressional favorite, served every Thursday
in the Rayburn Café.

  • 3 large red vine ripe tomatoes, diced small
  • 3 large yellow vine ripe tomatoes, diced small
  • 6 jalapeños, finely chopped
  • 2 large red onion, diced small
  • 6 cloves garlic, finely chopped
  • 2 bunches cilantro, finely chopped
  • 3 shakes Tabasco sauce
  • 1/2 c. lime juice
  • 1/2 c. extra virgin olive oil
  • 1/4 c. tequila (preferably Patron Gold)
  • Salt and pepper, to taste
  1. In a large bowl, combine all ingredients. Season with salt and pepper.
  2. Cover with plastic wrap and let stand in fridge for 30 minutes.
  3. Serve at room temperature with tacos, tortilla chips, or as a refreshing accompaniment to grilled foods; serves 4.

Careers through Culinary Arts Program (C-CAP) works with public schools across the nation to prepare high school students for college and career opportunities in the restaurant and hospitality industry. A national nonprofit, C-CAP provides teacher training, scholarships, cooking competitions, job shadows, training and internships, college and career advising, and product and equipment donations.
