How C-CAP Made a Difference
“C-CAP has made everything in my life fall into place,” McNulty declares. “It’s like stacking bricks to build a house. My knowledge is strong and I want to learn and push myself because C-CAP has given me the chance. Without my scholarship, who knows what I would be doing now.”

“As a child I always loved to cook with my grandmother,” says Diamond McNulty. “From soul-food greens to hamburgers, I was her helper. When I entered CVS High School and could choose a major, I knew what it would be. If you love something, why not get paid to do it?” he asks.

Even so, McNulty second-guessed himself now and then about whether he was making the right career choice–until the C-CAP Competition. “Competing and winning a $24,000 scholarship to Kendall College’s culinary school gave me a hunger for more. I knew I wanted to be the best in the field.” Today he says, “I’m proud of how far I’ve progressed.”

A TASTE OF C-CAP:
Diamond’s Southern Dirty Rice

  • 2 c. rice
  • 1/2 lb. ground beef
  • 1/4 c. onion, small dice
  • 1/4 c. mixed bell peppers, small dice
  • 1/4 c. beef base, to taste
  • 1/4 c. chicken base, to taste
  • 4 bay leaves (fresh or dried)
  • 3 Tbs. thyme leaves (fresh or dried)
  • 3 Tbs. fresh chopped parsley
  1. In large sauce pot, sauté ground beef until almost fully cooked. Add onions and bell peppers; cook until tender. Incorporate rice and cook for 2 minutes (until everything looks delicious).
  2. In large bowl, add 5 c. water. Mix in chicken and beef base until dissolved. Taste and adjust chicken base for flavor and beef base for color.
  3. Add liquid to pot with ground beef and rice. Add bay leaves and thyme and mix. Cover and simmer until rice almost fully cooked. (Keep an eye on pot and check for doneness.) Turn off heat, cover and let steam finish cooking rice.
  4. Toss finished rice with parsley and serve. Makes about 6 servings.

Careers through Culinary Arts Program (C-CAP) works with public schools across the nation to prepare high school students for college and career opportunities in the restaurant and hospitality industry. A national nonprofit, C-CAP provides teacher training, scholarships, cooking competitions, job shadows, training and internships, college and career advising, and product and equipment donations.
