How C-CAP Made a Difference
“Without C-CAP, I don’t know where I would have ended up,” says Luck. “When my life consisted of running the streets and getting into trouble, C-CAP gave me another option”—a scholarship with which to establish a successful career.

Brother Luck had practical reasons to opt for culinary arts in high school. “I was pretty good in the kitchen. I also figured there would be free lunch every day,” he explains.

By his senior year, Luck knew he wanted to be a chef. “I was working at a fine-dining restaurant in Phoenix,” he recalls. “After knocking out my first Friday night rush on my own, I realized I had a future in this business.”

A TASTE OF C-CAP: Brother’s Cumin-Seared Scallops with Spicy Cilantro Puree

Scallops

  • 16 U-10 (sea) scallops (side muscle removed)
  • 1 tsp. ground cumin
  • 1/2 tsp. each kosher salt and cracked black pepper
  • 1/4 c. canola oil

Puree

  • 1 bunch cilantro
  • 1/4 c. chopped green onions
  • 1 each avocado, poblano pepper and fresh lime
  • 1/2 tsp. kosher salt
  • 1 c. water
  1. Prepare puree: Peel and seed avocado; remove pepper stem and seeds; juice lime.
  2. Place all ingredients in a blender; puree until smooth. Makes 2 cups.
  3. Prepare scallops: Preheat oven to 375°. Completely dry scallops with paper towel; season both sides with cumin, salt and pepper.
  4. Sauté scallops in oil over high heat to golden caramel color, 3 to 5 minutes per side.
  5. Finish scallops in oven for 3 minutes. Makes 4 dinner portions; serve with puree.

Careers through Culinary Arts Program (C-CAP) works with public schools across the nation to prepare high school students for college and career opportunities in the restaurant and hospitality industry. A national nonprofit, C-CAP provides teacher training, scholarships, cooking competitions, job shadows, training and internships, college and career advising, and product and equipment donations.
