How C-CAP Made a Difference

“C-CAP made it possible for me to attend culinary school. I still get e-mails from C-CAP, and Mr. Grausman sends me messages on Facebook asking how I am. I know I can always look to C-CAP for any kind of help I need.”

Sophia Christian-Holliday knew in middle school that she wanted to be a chef. In high school, she took all the culinary courses she could. During that time her teacher, Verdonda Wright, began working with C-CAP. Christian-Holliday became her school’s first C-CAP scholarship winner.

Throughout her four years at Johnson & Wales University, she stayed in contact with Mrs. Wright, even visiting Phoebus culinary classes to demonstrate what she was learning. Now Christian-Holliday teaches with her former culinary arts instructor at her alma mater. “I know what our C-CAP students experience,” she adds, “because I’ve been there.”

A TASTE OF C-CAP:
Sophia’s French Onion Soup

  • 8 yellow onions, sliced
  • 2 garlic cloves, minced
  • 1/3 c. olive oil
  • 2 tbs. all-purpose flour
  • 8 c. beef stock
  • 1/4 c. dry white wine
  • 1/2 tsp. dried thyme
  • 1 bay leaf
  • Salt and pepper
  • 1 loaf French bread
  • Butter
  • 2 c. grated Gruyere cheese
  1. Sauté onions and garlic in olive oil over low heat until tender and golden. Sprinkle flour over onions. Cook to brown the flour well.
  2. Add stock and wine. Bring to a boil; add thyme and bay leaf. Reduce heat, cover and simmer about 20 minutes. Salt and pepper to taste.
  3. Cut bread in 3/4-inch slices; butter each side. Toast on griddle until golden brown.
  4. Ladle soup into an ovenproof bowl. Add toasted bread and cover with cheese.
  5. Place bowl on a foil-lined sheet. Bake at 350° or broil 5 minutes to melt cheese. Makes about 4 to 6 servings.

Careers through Culinary Arts Program (C-CAP) works with public schools across the nation to prepare high school students for college and career opportunities in the restaurant and hospitality industry. A national nonprofit, C-CAP provides teacher training, scholarships, cooking competitions, job shadows, training and internships, college and career advising, and product and equipment donations.
